Once the vegetables are cooked, add the stock and bring the soup to a boil.
Once boiling, reduce the heat and let the soup simmer until it reaches the desired consistency. Serve the vegetable soup hot, and enjoy.

2. Make A Vegan Stir-Fry
To make a vegan stir-fry with veggies, make a vegetable broth or stock. Start by boiling a pot of water and adding vegetables such as onions, carrots, celery, garlic, and mushrooms.
Simmer the vegetables in the water for about 30 minutes, then strain the vegetables and reserve the liquid. In a wok, heat a few tablespoons of oil over medium-high heat.
Add the chopped vegetables of your choice, such as bell peppers, broccoli, bok choy, and snow peas. Stir-fry the vegetables for about 5 minutes until they are lightly browned and crisp-tender.
Add in a few tablespoons of soy sauce and the vegetable broth  that was made earlier. Simmer for another 5 minutes, stirring occasionally. Serve the vegan stir-fry with cooked rice or noodles.
3. Use As A Topping For Pizza
Making a vegetable stock and using it as a topping for pizza with veggies is a great way to add flavor and texture to your dish. Start by adding the vegetables of your choice to a pot and covering them with water.
Bring the water to a boil, then reduce the heat to low and simmer for 30 minutes. Strain the vegetables out, reserving the liquid, and set them aside. Once the stock is made, use it as a topping for your pizza.
Add your favorite veggies, such as peppers, mushrooms, and onions, and top with grated cheese and your stock. Bake in the oven until the cheese is melted and the pizza is heated.
4. Use As A Filling For Burritos
After making your stock, use it as a filling for burritos  with veggies. Start by sautéing the vegetables of your choice in a large pan with some oil.
Once the vegetables are soft, add the stock, season with salt and pepper, and simmer for a few minutes. Then, spoon the mixture into warmed tortillas and top with your favorite toppings like cheese, diced tomatoes, and avocados.
5. Make A Frittata Or Quiche
Start by preheating the oven to 375 degrees. Begin by making a vegetable stock by simmering carrots, celery, and onions in a large pot with water for about an hour. Once the stock is ready, strain it and set it aside.

Whisk together eight eggs and a cup of milk in a medium bowl. Season the mixture with salt and pepper. Pour the egg mixture into the skillet and cook on low heat for about 5 minutes.
Sprinkle shredded cheese on top and bake in the oven for 20 minutes. Let cool before serving.

Once you have made your stock, you can use it to blend it into a delicious vegetable dip. Start by adding onions, garlic, and your favorite herbs and spices to the stock and let it simmer for a few minutes.
Then add your favorite vegetables, such as carrots, celery, and bell peppers, and let them cook until they are soft. Finally, blend all the ingredients until they are smooth and creamy.
