Here is the bottom line: For us. 10.3 lb rib roast. took it from the freezer, 24 hours in advance, put it in the fridge. Did not thaw at all over the 24 hours, maybe the outer 1/4 “. Our meat thermometer did not go beyond the 1/4 ” and registered 30 degrees on the outside.

Put it in at 6:20 am (for a mid afternoon meal), at 450 degrees. At 7:00 am, we dropped the temp to 325 and was able to insert the probe all the way to the middle by 7:30. We then watched the temperature rise as it normally would and the whole thing was done (117 degrees) at 10:04. By 10:30, it was 128 degrees.

Of course now we had a done Prime Rib and had to rush everything. Our meal went on the table at 12:00. We let the Prime Rib sit in its juices for the 90 minutes. It was perfect. The best texture, best flavor, best color, PERFECT, Medium-Rare!. Going forward, we will make it frozen every time.
