  1. Portabella muchrooms, and by extension, button mushrooms, contain the carcinogenic agaritine when uncooked. Cooking destroys the agaritine removing the carcinogen compounds.

    Yes, I eat portabella raw very sparingly, as it is know eating large quantities raw frequently has a carcinogenic effect on the body. Caution and moderation should be observed when eating raw button and portabella mushrooms as everyone’s system is different and the carcinogen can act differently in different people.

    As we know, small amounts of toxins can be medicinal, though large amounts can be, well, toxic in varying ways for a rang of people.
